(Japanese: マヨネーズ師匠 Master Mayonnaise) is a recurring character that appeared in Pokémon Horizons: The Series, debuting in Episode: Mega Evolution. He is a Mega Evolution specialist who lives in Lumiose City looking for new disciples to train with him.

History
Episode: Mega Evolution
Master Mayonnaise debuted in Mega Evolution - Roy. He first approached a crowd in order to spread Mega Evolution to more people, but only ended up catching Roy and Ult's attention. After talking about the basics to them, he gave each of them a Mega Ring and tasked them with defeating the Yellow Blast at the Mayo Maze Palace.
In Mega Evolution - Ult, Mayonnaise found Roy and Ult practicing Mega Evolution in an alleyway. Despite failing to defeat Yellow Blast, Roy and Ult were determined to challenge it again and win. Impressed by the boys' fervor, Mayonnaise informed them that the key to mastering Mega Evolution was the bond between a Trainer and their Pokémon. At Mayonnaise's suggestion, Roy and Ult faced each other in a battle that ended in the former's victory. Mayonnaise criticized Ult's performance, stating that he lost due to not putting his full faith in his Sableye. As he left, Mayonnaise told Ult that as long as he failed to truly connect with Sableye, then he should just give up on trying to achieve Mega Evolution.
In Mega Evolution - Bonds, after taking Mayonnaise's words to heart, Roy and Ult once again challenged the Mayo Maze Palace, this time facing off and defeating Count Oyster and Shōyu the Shinobi. Mayonnaise appeared before the boys and officiated their rematch with Yellow Blast. As they fought, Ult managed to successfully Mega Evolve Sableye, while Roy formed a connection with Yellow Blast, causing it to Mega Evolve as well, much to Mayonnaise's surprise. While Sableye eventually lost due to not being used to its Mega-Evolved form, Roy and Crocalor eventually emerged victorious over Yellow Blast.
Mayonnaise, Count Oyster, and Shōyu congratulated Roy and Ult for their success and revealed they created the Mayo Maze Palace to serve as a place to strengthen the bonds between Trainers and their Pokémon. Noting that Lucario saw potential in Roy, Mayonnaise suggested that he add it to his team, which Roy happily accepted. Roy and Ult then said farewell to Mayonnaise and his companions, who told the boys that how they utilize Mega Evolution is up to them.
Later, as he prepared to leave Lumiose City, Roy stopped by a clothing shop run by Mayonnaise in civilian clothing to change up his wardrobe.
Character
At first glance Mayonnaise appears to be an eccentric and bold person, with a bolder passion for teaching people about the power of Mega evolution regardless if they listen or not. Despite this he is a knowledgeable person at heart who knows the principles of Mega Evolution and the importance of bonds between people and Pokemon, offering advice and constructive critisism to trainers and is quick to point out what Trainers are lacking in battle such as Ult's case with his lack of trust in Sableye.
