The main source of these changes come from:

Moves that change its user or target

144 Transform Normal Status Becomes the type of the target.
160 Conversion Normal Status In Generation I, changes user's type(s) to that of the target's. Since Generation II, changes user's type to one of its moves, except Curse when it was a ???-type move.
176 Conversion 2 Normal Status Depends on move used against the Pokémon who used it, then it becomes one of the types who resist the move. Before Generation V, it could also change Pokémon to a type immune to whatever move it took last. Since Generation V, this also works on non-damaging moves. The move won't change the user to a type it already has.
293 Camouflage Normal Status Depends on terrain
355 Roost Flying Status Temporarily removes Flying-type. Pure Flying-type Pokémon become ???-type in Generation IV, and Normal-type in Generation V onwards.
487 Soak Water Status Changes Pokémon to pure Water-type.
513 Reflect Type Normal Status Changes Pokémon's type(s) to that of target's.
567 Trick-or-Treat Ghost Status Adds Ghost-type to Pokémon, working as third type on dual-type Pokémon
571 Forest's Curse Grass Status Adds Grass-type to Pokémon, working as third type on dual-type Pokémon

Abilities

Name Effect
Multitype Changes the Pokémon to the type of plate held.
Color Change Changes the Pokémon to the type of the last move it got hit by
Protean Changes the Pokémon to the type of whatever move it will use, other than Struggle.
