I have two theories. The first one I got while reading Wikipedia. It mentiong Time like intervals, Space like intervals, and LIGHT like intervals. Giratina rebelled. Now, I am going to make a Biblical reference. Stay with me. In the Bible, Satan, an angel (a being of purity and light) rebelled against God. He was damned and made the master of hell. So, maybe Arceus intended Giratina to represent Light, but Giratina rebelled, becoming the opposite of what was intended? Further proof of this is found in the number of spikes, legs, and golden rings. The commonly accepted number of the beast is 666 (even though it is 616, iirc). Giratina has SIX rings, SIX legs), and SIX red spikes. 666.
The other idea is that Giratina represents Balance. Cyrus goes on and on about how the two worlds are like DNA, opposites of each other, and that Giratina was upset and trying to stop him from disrupting either world. So, Giratina could represent the Balance needed between Time and Space that is required for the worlds to function and, well, exist
Well? Oh, and I think Giratina's 'gem' is the rings. Notice how it is the only lit up part in the Platinum intro, like how Dialga's lit up part was his Diamond, and Palkia's was his Pearl? Also, the Griseous (the PLATINUM orb in Japan), is YELLOW/GOLD, like Giratina's rings, leg... things..., and head piece. Since the game is Platinum, then that would mean that, if Giratina has something representing that on him, then it would be a metal, not a gem
